Nutty granola

Nutty granola

Ingredients (make approx. 1300 g granola) 

  • 500 g organic rolled oats 
  • 100 g mixed nuts (i.e., hazel, walnuts, pecan, Brazil nuts, almond) 
  • 60 g pumpkin seed 
  • 30 g chia seed 
  • 300 g mixed dried fruit (raisins, cranberries, sour cherries, apricot) 
  • 200 g coconut oil / olive oil 
  • 180 g maple syrup / honey 
  • 2 tsp dried ginger 
  • 2 tsp cinnamon 
  • Serve with Kefir, natural or Greek yoghurt.

 

Method: 

  1. Melt the maple syrup and coconut oil (or olive oil and honey) on low heat. 
  2. Add the cinnamon and ginger and stir. 
  3. Mix the oats and seeds and spread on a large baking tray. 
  4. Poor the melted syrup on it and mix so the oaty nut mix is evenly coated. 
  5. Bake on low heat 120 fan settings for 45 minutes. Stir at least three times while baking.  
  6. Let it cool and then place in a jar. Use within 3 months.

Tips: 

  • Use different nuts and dried fruit every time you make a new batch to include more nutrients. 
  • Sprinkle chia seeds that your kids cannot pick out! 🙂
